Ingredients : For 4 People :

  • 2 onions
  • 4 carrots
  • 20 g of butter
  • 3 tablespoons flour
  • the juice of 2 beautiful oranges
  • 1 liter of blond beer or amber
  • 3 tablespoons of brown vergeoise (or brown sugar)
  • 2 sheets of Laurier
  • 1/2 teaspoon ground cumin
  • 2 cloves
  • salt, pepper

✔ Preparation :


1. Cut the meat in thick slices. Peel the onions and cut them in slices. Peel and cut the carrots into washers.

2. In a casserole, brown the slices of meat in the melted butter. (Do this twice if the pot is small). Season to taste. Add the flour and onions. Mix well and cook for 5 min while stirring, to tenderize the onions without the coloring.

3. Add the orange juice and let him cook for 2 min. Then, add the beer, 50 cl water, the brown sugar, bay leaf cumin and cloves. Bring to a boil, cover and then lower the fire to simmer for 2h45. Add the carrots 1h before the end of the cooking.

4. Remove the cover, increase the fire and cook, stirring, until the sauce has reduced by half.

     Preparation: 30 min
         Cooking time: 3 hours
