SALVADORAN BREAKFAST PANCAKES (AKA QUESADILLAS)

SALVADORAN BREAKFAST PANCAKES,

Ingredients :


  • 1 cup rice flour
  • 1 teaspoon baking powder
  • Pinch of salt
  • ½ pound (2 sticks) unsalted butter, at room temperature
  • 1 cup sugar
  • 3 large eggs
  • 1 cup sour cream
  • ½ cup grated hard cheese such as cotija or Parmesan
  • Sesame seeds for sprinkling

Preparation Steps :


1. Heat the oven to 350°F. Grease 18 muffin cups.

2. Whisk together the rice flour, baking powder, and salt.

3. In the bowl of a stand mixer fitted with the paddle attachment, cream the butter with the sugar. Add the eggs one at a time, mixing until fully incorporated. Scrape down the sides as needed. Beat in the sour cream, cheese, and rice flour mixture until a smooth batter forms.

4. Spoon into the greased muffin tins, filling each one four-fifths of the way (this batter does not rise much). Sprinkle on sesame seeds to taste.

5. Bake until nut brown, 15 to 20 minutes. Let cool to room temperature. They taste like a cheesy pound cake; amazing with a cup of coffee in the morning.

Pancakes With Tofu and Oats,

✔ Let's Quickly talk about Oats, via their high fiber content, are already known to help remove cholesterol from the digestive system that would otherwise end up in the bloodstream. 

Now, the latest research suggests they may have another cardio-protective mechanism.

Ingredients :


  • 1.5 Cup crumbled firm tofu
  • 2 minced French shallots
  • 0.75 Cup flakes oats (Normal oatmeal)
  • 2 tablespoons flour
  • 3 tablespoons water
  • 1 egg beaten
  • 3 tablespoons tamari
  • 2 teaspoons mustard
  • salt and pepper
  • 0.25 teaspoon celery salt
  • 0.5 teaspoon powder garlic
  • 3 tablespoons oil olive

Pancakes With Tofu and Oats,

Preaparation Steps :


Step 1 :

• In a medium bowl, combine tofu, scallions, snowflakes oats, flour, water, egg, sauce, Tamari, mustard and spices. Stir well. Let the mixture stand 15 minutes in the refrigerator.

Step 2 :

• Divide the mixture into 8 portions. Shape 1/4 inch round cakes thickness (approximately).

Step 3 :

• In a skillet, heat oil over medium heat. Cook the patties for a few minutes on each side, or until 'on what' they are golden.


 Note : Eat very well with a salad or vegetables of your choice.


Pancakes With Tofu and Oats,

Preparation 20 minutes.
Cook for 10 minutes.
A total of 30 minutes.
Portion (s) 4 servings.
